<dc:description>This experiment was conducted in Wanzai, Jiangxi Province, for two years, from 2023 to 2024, with seven treatments and three replicates. The fresh potato yield was calculated during the harvest period. And according to the "GB 5009.93-2017 National Food Safety Standard for Determination of Selenium in Foods," the total selenium content of each organ was determined, and the selenium accumulation in roots = selenium content in root tubers x root tuber yield. For quality determination: the anthrone sulfuric acid method is used to determine the soluble sugar content; using the Kjeldahl method to determine nitrogen content and multiplying it by a conversion factor of 6.25 yields the protein content in potato chunks; using the anthrone perchloric acid method to measure the total starch content; determining the content of amylose according to NY/T2639-2014; and amylopectin content = total starch content - amylose content. The RVA (Rapid Viscosity Analyzer Super 3, Newport Scientific, Australia) and TCW software were used to analyze the viscosity characteristics of sweet potato starch, including peak viscosity (cP), hot paste viscosity (cP), final viscosity (cP), disintegration value (cP), attenuation value (cP), and gelatinization temperature (℃). The thermodynamic properties of starch were measured using a differential scanning calorimeter (DSC-Q2000, TA Instruments, USA), with thermodynamic indicators including initial temperature (℃), maximum temperature (℃), final temperature (℃), and enthalpy of gelatinization (J g⁻¹). Data organization: Excel 2021 was used, and SPSS 25.0 software was used for significance testing (P<0.05) (different letters indicate significant differences). Origin 9.0 software was used for plotting. </dc:description>
